Chicken Bone Broth

Ingredients
- 1 Whole chicken carcass
- 2 Whole unpeeled carrots
- 2 Stalks of celery
- 1 Onion
- ¼ Cup white vinegar
1. Wash and roughly chop veggies
2. Place veggies and whole chicken carcass into instant pot and cover with cold water filling the pot until max PC fill line.
3. Close lid and seal instant pot.
4. Press stock/broth button on instant pot and set time to 3 hours.
5. Remove the veggies and bones and strain the broth.
6. Place strained broth into fridge for a few hours until fat hardens at the top.
7. Remove fat and store broth in fridge or freeze in 1 cup measurements until ready to use.
This usually makes about 10 cups for me when I cook it in my instant pot. I like to freeze my bone broth in 1 cup portions using a silicone mold.
